Metcha on an Airplane Pico

Air travel can often be characterized as unpleasant; whether it's the flight crew, fellow passengers, or bad weather, each has an equal opportunity to make your flight a shitty experience. More often than not, fellow passengers tend to breed hatred amongst each other, by enflicting elbows to asile sitters, maintaining poor body odor, or snoring like a gas-powered yard tool.
On the off chance that you do get seated next to or sandwiched between two friendly and equally motivated communicators, the flight can be really memorable. This scenario happened to me while traveling back from Palm Springs, CA in April. Sandwiched between two nice passengers, one of whom I've forgotten their name and the other named Abby. After sharing war stories of our trips, my fellow flight comrades became interested in Jersey Organics and vowed to order. Keeping her word, Abby ordered and began sharing her tasty meal creations.
The recipe below is for Abby's tasty pico de gallo, which I've coined, Metcha on an Airplane Pico. She also has a spicy salad vinegrette that she's holding from us...

How to make Metcha on an Airplane Pico
Ingredients
4 Roma tomatoes, diced
1/2 medium white onion, chopped (can sub out for yellow or red onions)
1 jalapeno, seeded and minced
1-2 Tbsp Spiny Piney
1/2 cup cilantro, chopped
2 Tbsp lime juice
1/2 Tsp salt
1/8 Tsp black pepper
Step 1: Simply Combine
After carefully or uncarefully measuring and chopping the ingredients, locate a mixing bowl.
Begin combining ingredients. mixing to create an even distribution. Set aside the lime juice and salt for last. Taste.
Add lime juice. Taste.
If sufficient, add salt. Taste.
Go through a few rounds of tasting prior to sharing with any friends or guests. This is an important step to ensure you get your fair share.
Serving and Storing
Pull out your favorite small dip or salsa bowl. Add your Metcha on an Airplane Pico to the bowl. Make it look pretty.
Since this pico is so incredibly addictive, you likely won't have to consider storage. But if you do, it should last refrigerated for 1 week.
